The Birds, the Bees...and the Honey

1CE Honey was born from a simple love of the bush.
Long walks through Western Australia’s native landscapes, the quiet hum of bees in the air, and a deep appreciation for nature sparked an idea that slowly grew into something more. What began as peaceful nature walks, noticing wildflowers, watching bees at work and listening to the chorus of birds overhead, eventually became a dream: to bring nature’s medicine straight from the hive to the jar, just as the bees intended.
At its heart, 1CE Honey is about simplicity, authenticity and a deep respect for the natural world. Honey is one of nature’s oldest and most remarkable foods. For centuries it has been valued not just for its sweetness, but for its natural goodness and nourishing qualities. We believe something this pure does not need to be complicated. Our philosophy is simple: let the bees do what they do best.
Our honey comes from hives scattered across the West Coast of Western Australia, where bees forage among native bushland, coastal flora and seasonal wildflowers. These landscapes are incredibly diverse, and that diversity gives each harvest its own character. Some honeys are rich and dark with deep bush flavours, while others are lighter and more floral, reflecting the blossoms the bees have visited.
Alongside a love of bees and wildflowers has always been a quiet appreciation for the birds that share these landscapes. Early mornings in the bush often begin with the familiar sounds of the Australian outdoors: magpies calling, parrots darting through the trees, and honeyeaters moving from blossom to blossom while bees work the same flowers below. It is a small reminder that nature never works in isolation. The bush, the birds, the bees and the flowers all exist together in one living ecosystem.
All of our honey is bottled in Bedfordale, Western Australia, in small boutique batches. Keeping production small allows us to maintain quality, preserve the natural properties of the honey, and ensure that what reaches your table is as close to the hive as possible. No unnecessary processing, no blending away the natural flavours, just pure honey with all the character nature intended.
For us, 1CE Honey is more than just honey in a jar. It represents a love for the Australian bush, a respect for bees and the vital role they play in our environment, and a simple dream of sharing something honest and beautiful with others.
From the quiet bush walks where the idea first began, to the bees working across Western Australia’s landscapes, every jar of 1CE Honey carries a small piece of that story.
