Not so long ago, places like this weren’t hard to find.
Low, damp country, bursting into wildflower; kangaroos moving through the bush, Bottlebrush glowing with colour and bees drifting from bloom to bloom. Before the roads, rooftops and development, this was simply part of the landscape around us.
In one special pocket of Jandakot, it still is.
Bottlebrush Bee Brew comes from one of the remaining stretches of old wildflower country close to Perth suburbia, land that has escaped the march of development and, season after season, continues to erupt with an extraordinary abundance of native flora.
The property belongs to a long-time local who has held onto his patch of bush while much of the country around it has changed. And because he has, the kangaroos still wander through, the wildflowers still return and our bees have access to a remarkable little sanctuary.
Bottlebrush leads the way, joined by Grevillea, daisies and countless other bush blossoms flowering across the wetter lowlands.
And you can taste that abundance.
Bright, fruity and wonderfully vibrant, this is a honey that almost bursts with flavour. There’s a lively sweetness followed by layers of fruit and bush florals, the sort of honey that makes you stop after the first spoonful and go back for another just to work out everything you tasted.
Naturally high in fructose, Bottlebrush Bee Brew can crystallise readily, so keeping it somewhere gently warm will help maintain its flowing texture. But should your jar turn crystalline, don’t mistake that for the flavour disappearing. It remains every bit as fruity, floral and wonderfully alive, just with a different texture.
Unfiltered and unprocessed, it’s raw honey gathered from a little piece of bush that reminds us what this country looked like before so much of it changed.
As Perth grows around it, this patch still flowers.
The kangaroos still come.
And, thankfully, so do the bees.
