From the low, damp wildflower country of Jandakot comes one of the most dependable honeys our bees make. A flavour that somehow follows us through spring, summer and autumn.
At the heart of it is native Callistemon, our Bottlebrush.
Season after season, its distinctive nectar finds its way into the hive, joined by Grevillea and the countless other wildflowers growing across this remarkable patch of wetland bush.
The flowers change.
The seasons turn.
But somehow, that familiar flavour remains.
And it's unmistakable.
When first harvested, this honey can be remarkably dark; rich, vibrant and packed with the natural sugars of the flowers the bees have been working. Given time, those sugars do exactly what good raw honey naturally wants to do.
They crystallise.
Rather than fight it, we let nature lead the way.
Through careful creaming, those natural crystals are worked into an incredibly fine, smooth texture, transforming the dark liquid honey into something beautifully thick, velvety and spreadable.
Nothing needs to be added.
The bees already did the difficult part.
The result is Native Callistemon Nectar. A creamed raw honey with the distinctive fruity, floral character of Jandakot Bottlebrush and Grevillea running right through it.
