Honey in its purest form

There are few things more exciting for a beekeeper than opening a hive and finding a perfect round of honeycomb.

Because the bees don’t make these for us easily.

Honeycomb rounds are among the last things they’ll turn their attention to, only working them when the nectar is flowing so strongly that there is abundance to spare. And unlike simply refilling an existing cell with honey, building new comb means starting from nothing, producing the wax, constructing thousands of perfectly formed cells, filling each one with nectar, ripening it into honey and finally sealing it away.

It takes the bees around eight times the effort to build new honeycomb as it does to simply refill existing cells with honey.

Which makes every finished round feel like a small triumph.

And you never quite know what you're going to find.

Some rounds emerge from the hive almost impossibly beautiful — pale golden honey beneath pristine, creamy-white cappings. Others are amber, caramel or remarkably dark, their colour influenced by the nectar the bees were gathering at the time.

That variation is part of their magic.

Every round is a snapshot of exactly what was flowering when the bees made it.

Lift one from the hive and you're holding something quite extraordinary: honey exactly where the bees put it, still sealed inside the wax they built to protect it.

No extracting. No filtering. No processing.

Just bees, wax and honey.

Because honeycomb can only be produced when nectar flows are exceptionally strong, availability is never guaranteed, and neither is the flavour.

One round might be delicate and floral. Another could carry rich Marri, vibrant wildflowers, deep bushland nectar or something completely unexpected.

The colour changes.The flavour changes.Even the comb itself changes.

No two are ever quite the same.

Slice it onto a grazing board with a beautiful cheese, spread it over warm bread, or simply bite straight into it and experience the comb giving way to honey that has never left the cell in which it was made.

Of all the ways we can give you honey, this is perhaps the closest we can come to handing you a piece of the hive itself.
