Limited Release Blue Jarrah Honey

Some honeys come from a place. Sweet Carolyn belongs to one.

Gathered from old bushland in the hills of Roleystone, this limited-release Blue Jarrah honey captures one of those rare seasons when the Jarrah decides to flower, something it doesn’t promise to do every year.

The hives once sat on land held across generations. A place cared for by a lady with that particular gift of loving the land enough to know how to tend it, nurture it and somehow make beautiful things grow.

As spring slipped quietly into summer, the Jarrah flowered, the bees went to work, and Sweet Carolyn was gathered.

Today, our bees can no longer forage on that property, making the honey from those seasons something we cannot simply return to and make again. Each jar holds a little piece of that place, that flowering and the people who cared for the country that made it possible.

And the name? Well, if Sweet Carolyn happens to have you humming a familiar tune, that’s no accident. It’s our little play on an old favourite, with a distinctly Roleystone story behind it.

Unfiltered and unprocessed, this Blue Jarrah honey is raw, expressive and beautifully individual. A rare nectar flow, gathered from old bushland during one brief turning of the seasons.

More than anything, Sweet Carolyn is our way of saying thank you. Thank you to the people who welcomed our bees, to the hands that tended the land, and to a beautiful patch of Roleystone bush that gave us something worth remembering.

Store in a cool, dry place at room temperature, ideally above 24°C, and keep away from direct sunlight.

Raw honey may naturally crystallise over time. This is completely normal and does not mean the honey has spoiled.

To help keep your honey liquid for longer, avoid refrigeration and prolonged storage in cool conditions.

If crystallisation occurs, place the jar in warm water and gently heat until the crystals dissolve. Avoid overheating the honey.
