Every family has the one who turns up unexpectedly and refuses to be forgotten.

Meet Ruby the Fifth.

Born from a hive rescue in Bedfordale, Ruby was never planned, could never have been predicted and, in all likelihood, will never be made quite the same way again.

Inside the rescued hive remained honey gathered during an earlier season, darker, mature and carrying the flavours of nectar flows already passed. Then, as the colony settled into its new chapter, Bedfordale’s Jarrah began to flower.

The bees added something new to something old.

And quite by accident, Ruby was born.

Slightly darker than our other Fifth Generation honeys, she brings together two moments in the landscape: the depth and complexity of an older season with the distinctive richness of fresh, early-flowering Jarrah.

The result is extraordinary.

Deep, complex and full of unexpected flavour, every spoonful seems to offer something a little different. It isn't a floral blend we could deliberately reproduce, because it wasn't created according to a recipe.

It was created by circumstance.

One rescued hive. Two seasons. One very small batch.

There will never be much Ruby to go around, which is exactly why we’ve chosen to offer her only in 200g jars. Rather than a handful of people taking home a large jar, we want as many curious honey lovers as possible to have the chance to taste this remarkable little accident.

When this batch is gone, Ruby the Fifth is gone with it.

Another rescue may one day surprise us. Another hive may hold its own forgotten season. But it won't be this honey, from these bees, at this moment in Bedfordale.

Some honeys are harvested.

Others are discovered.
